This wine is made from a single block of GinGin Chardonnay which is growing alongside our small and rare planting of Aligote.
The Aligote grape also hails from Burgundy and is a late ripening variety. We use the Aligote to help balance the acidity in the wine. This year the blend contains 8% Aligote
Direct pressed for wild fermentation in barrel and concrete egg. Approx 25% concrete egg and 75% seasoned French oak. 12 months maturation on lees follows, before being racked to tank and bottled immediately.
Like your favourite comedian, this wine has a wonderfully dry delivery and flavourful punchline that will send your tastebuds into the giggles. It’s Chardonnay base offers a full-body mouthfeel, with the Aligoté adding citrus notes for a subtle tang.
