As Qantas Magazine once put it, it's “like Margaret River Cabernet with the volume turned way up.” And they weren’t wrong.
Made from a single block of Cabernet Sauvignon, the grapes are handpicked and air-dried before wild fermentation. This concentrates the flavours of the fruit, giving it a more powerful edge. The grapes are then foot-crushed, hand-plunged during wild fermentation. It’s left on skins for 100 days and 100 nights, then gently basket pressed to French oak barrels.
It’s big and brooding. Think: blackberry compote, blackcurrant liqueur, charred herbs, dark chocolate. Rich cassis and plum jam, framed by cocoa and roasted spice. But it’s not just a fruit bomb—there’s a savoury edge too: dried thyme, graphite, and the iron backbone of old-school Cab. The skin contact gives tannins that are both fierce and finessed—grippy, chewy, and begging for meat or time.
Perfect with a lamb shank in the oven, a fire crackling in the grate, and a few good mates getting philosophical over the playlist. You’ll want something fatty, smoky, or slow-cooked—this wine isn’t here to play sidekick.
