Like all good Aussie characters this bloke is generally referred to by his nickname, Cab Sav. But, while it's fine to shorten the name, it's best to take your time when making one.
From the north side of Margs where the soils are gravelly and the nights get cool, it leans into classic Cab notes, but with the restraint and crunch that only organic farming and minimal mucking-about can give.
2024 is pretty. Delicate. Blossoming with violets, blackberry and cassis. The palate is structured but not shouty. Earthy, dried oregano, and fine, gritty tannins. Medium bodied, never heavy. You could lay this down for a few years, but it’s got that drink-me-now swagger.
Grill some lamb with rosemary, whip up a lentil and beetroot salad, tuck into hard cheese, or dark chocolate if you’re feeling fancy.
Ingredients: organic grapes and a whisper of sulphur to keep it fresh and stable
