This is not your Nonna’s Ripasso. It’s an old-world method, but a new wine for us – and maybe your new favourite red. Medium-bodied. The second ferment gives it chew and drive. Cabernet and Sangiovese get their boots muddied in the leftover skins from the Bernard ferment. It’s savoury, it’s spiky, and a little bit punk – but damn if it doesn’t pull it off in a leather jacket.

 

The air-dried skins are giving up all their plush fruit, wild spice and textural oomph. Spiced plums, old leather, black cherry, and the kind of dried herb you find in your pocket after a bushwalk. Juicy, dark, structured. Sour cherry and a little stemmy twang. Wildly savoury finish.

 

Take the day off, pop on Pavarotti, and unpack the pasta machine. This is a banger with a rich tomato sauce, braised rabbit, grilled mushrooms, charred eggplant, cured meats, or anything wrapped in puff pastry.
