Traditional method sparkling, reminiscent of a Loire Valley style. A single block of fruit from Quindalup is wild fermented and bottled during this fermentation to capture enough natural grape sugar to build pressure in the bottle. The wine rests on yeast lees for 12-15 months before being riddled. It is then Hand disgorged and hand labelled on site.
