2022 Evangeline - Sans Soufre
A little while ago we buried two Qvevri under the gum trees, lined one with Warré beeswax and filled them with de-stemmed Chenin Blanc grapes. Then we let the magic of the Quindalup sands make happy little skinsy ferments. 100 days and 100 nights later on a light-filled autumn day we bottled a cloudy, honeyed, textured kind of wine that would slide a whiskey down the bar and tell you to keep your chin up, if it could.
