We make it with Chenin Blanc and just a wee dash of Shiraz
Wild ferment, seasoned oak, stainless steel, hand-disgorged
Alcohol is low-ish and lively (~11-12%)

 

Like unicorn tears filtered through weaves of angel hair, this Petillant might be hard to make, but the results are what myths are made of.  Pale, dusky sunset pink, slightly hazy (like us on a Monday morning) with a gentle fizz – this isn’t a Champagne-style, it’s just bubbly enough to tickle your taste buds. Crunchy, fresh, and damn zippy. That fine fizz lifts the orchard fruit aromas. Dangerously moreish.  Subtle hints of a tropical fruit bowl—pineapple husk and red apples with that classic pét-nat fresh sourdough edge.

 

The wild ferment brings texture and the kind of balance that makes it equally good for necking at a picnic or sipping while pretending you understand modern art. Natural sediment may be present but it’s a cloudy, unfiltered vibe that tells you the wine was made with minimal faffery. Disgorged to make it more enjoyable as you move your way to the bottom of the bottle.

 

It finishes luscious and dry, leaving your tongue buzzing and your brain asking, “why don’t I drink this every damn day?”



Slam it down with fish tacos, tempura anything, or a picnic spread that’s half cheese, half whatever you found in the garden. Also excellent accompanied with zero expectations and a good group of mates to share it with.
